A word on spices in Indian recipes
Indian recipes not only
call for a lot of spices, but they also want them to added at specific
points in the cooking procedure -- beginning, before-the-middle,
middle, after-the-middle, end. Not only that, but you also have to add
a whole bunch of them at a certain point without pause and go right on
cooking.
The only way I have found to get around this is to
pre-measure all the spices into small bowls or dishes.I then line the
dishes up in the right order -- trying to remember at which end of the
line I'm supposed to start. That way, I can just throw in the whole
dish at the appropriate moment and go on cooking.
